My new favourite recipe for spotty bananas!
1 egg, slightly beaten
Â½ cup canola oil
Â½ cup sugar
1 cup bananas, mashed
1 cup green lentil purÃ©e*
1 tsp vanilla
11/3 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
Â½ cup raisins
1. Preheat oven to 200Â° C (400Â° F).
2. Combine egg, oil, sugar, bananas, lentil purÃ©e, and vanilla. Mix well.
3. Mix together flour, baking soda, baking powder and raisins. Stir into egg mixture only until combined.
4. Spoon into greased muffin tins 2/3 full.
5. Bake for 15-20 minutes.
*Lentil PurÃ©e Place cooked or rinsed & drained canned lentils into a food processor. For every 1 cup lentils, add Â¼ cup water. Blend to make a smooth purÃ©e with a consistency like canned pumpkin. If needed, add additional water 1 tbsp at a time.
