Banana lentil muffins

My new favourite recipe for spotty bananas!

Moist and yummy

From lentils.ca:

1 egg, slightly beaten
½ cup canola oil
½ cup sugar
1 cup bananas, mashed
1 cup green lentil purée*
1 tsp vanilla
11/3 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
½ cup raisins

1. Preheat oven to 200° C (400° F).
2. Combine egg, oil, sugar, bananas, lentil purée, and vanilla. Mix well.
3. Mix together flour, baking soda, baking powder and raisins. Stir into egg mixture only until combined.
4. Spoon into greased muffin tins 2/3 full.
5. Bake for 15-20 minutes.
*Lentil Purée Place cooked or rinsed & drained canned lentils into a food processor. For every 1 cup lentils, add ¼ cup water. Blend to make a smooth purée with a consistency like canned pumpkin. If needed, add additional water 1 tbsp at a time.
